I have met so many wonderful friends through books. Some are fictional, and some are flesh and bone friends...but all have made a difference in my life in one way or another. We all impact each other's lives. Sometimes it is by something you say that makes me think, and other times it is by a gesture or kindness. And yet other times it may be something that dug deeper, hurt my feelings, or made me sad. Still you made a difference. Through this blog I would like to introduce you to some people who have blessed me with their writing...and I hope you will be blessed as well!

Recipes for a crisp fall day....

Do you have a favorite recipe that you just have to make when the leaves start to fall from the trees and the air turns chill? I see a lot of posts for soups and the most popular one seems to be potato soup in its many variations. I make a vegetarian potato soup.

I start with some chopped onions (my favorite choice is vidallia) and I carmelize them in butter (about 2 tablespoons). I add a quart of organic vegetable soup broth, 1/8 cup of dried parsley, and fill the pot with potatoes. I prefer them unpeeled for the vitamines, and cut into chunks. I add salt and pepper to taste. I boil the potatoes until they are tender, then I add cream of mushroom and cream of celery soup, a quart of half and half, and bring back to a boil. I thicken it with instant mashed potatoes until I get just the right consistancy. When it is ready to serve we all like our differently around my house. Stevie likes hers with shredded 5 cheese blend; Floyd likes sour cream, cheese, and bacon bits (he isn't vegetarian) and I try a little of everything from time to time...sometimes I add ortega chillies, sometimes just cheese, other times the works (with fake bacon bits).

I like to serve this with cheddar cheese biscuits...mmmmm! What is YOUR favorite soup recipe???

RECIPE OF THE MONTH

CHILLED STRAWBERRY SOUP!

I just love strawberries, and what could be better on a warm summer day than serving chilled strawberry soup?

Ingredients-

2 pt. frozen strawberries (sugar added)
1/2 pt. Heavy Cream
1/2 Cup Sour Cream
2 Cups Strawberry yogurt
2 Cups Milk
3/4 Cup Superfine Sugar
1 pt. fresh blueberries
1 pt. fresh strawberries
ground cinnamon

In a deep bowl mix together Heavy Cream, Sour Cream, Yogurt,and Milk. Slowly add sugar and blend until sugar is dissolved. Fold in defrosted strawberries. Cover and let sit overnight. When ready to serve, wash and clean half the strawberries and slice into mixture. Ladle into clear cups (clear plastic cups, or clear dessert cups are great to show off the color). Add blueberries on top and sprinkel with cinnamon. Cut a strawberry half way and slip over edge of glass. Top with a dollop of fresh made whipped cream or use Readi-Whip. If you want more color add food coloring. Serve immediately.

Variations: Use fresh or frozen peaches soaked in sugar for a lucious peach soup.

Replace the yogurt, milk, and sour cream with all whipping cream (Whip the cream with vanilla and sugar to taste). Do not whip until stiff.

For for a lower fat version try using all fat free yogurt, and eliminating the heavy cream, sour cream and the sugar. Cut the milk to one cup.
